Պատրաստման եղանակը
Ցանկության դեպքում խինկալու միջուկը կարելի է պատրաստել 3/4 ոչխարի և 1/4 տավարի մասի խառնուրդով: Միսը խոշոր կտորների վերածել, երկու անգամ աղալ սոխի հետ: Կարելի է նաև մանր կտրատել, չաղալ: Ավելացնել այնքան մսի արգանակ, որքան միսը կներծծի: Այդպես միջուկը հյութեղ է ստացվում: Աղ, պղպեղ անել, ավելացնել շատ մանր կտրատած կանաչին, խառնել խճողակը:
Խմորը պատրաստելու համար ալյուրը մաղել մեծ հարթ ափսեի վրա, կենտրոնում փոս անել, մեջը լցնել տաք ջուր, մեկ ձու, աղ, պինդ խմոր հունցել: Կես ժամ թողնել` ծածկելով վրան: Խմորը բաժանել գնդիկների, շատ բարակ բացել, կենտրոնում դնել մոտավորապես այնքան միջուկ, որքան բացած խմորի քաշն է: Բոլոր կողմերից խմորը հավաքել, կենտրոնում միացնել:
Պատրաստի խինկալի եփել աղաջրի մեջ: Երբ ջրի երես բարձրանան, պատրաստ են: Հանել փայտե գդալով` աշխատելով չվնասել խմորը, որպեսզի միջի հյութը դուրս չգա: Մատուցել վրան սև պղպեղի ցանելով: Առանձին մատուցել մաղադանոս, համեմ, թարխուն: Խինկալին ուտում են ձեռքով` բռնելով խմորե «պոչից»:
