Պատրաստման եղանակ
- Պանիրը անկացնում ենք մեծ քերիչով: Սամիթը` մանր կտրատում ենք և խառնում պանրի հետ:
Կաթը տաքացնում ենք, ավելացնում ենք խմորիչը և խառնում։ Կարագը ալյուրի մի մասի, աղի և շաքարավազի հետ տրորում ենք և ավելացնում մի քիչ չաման։ Այնուհետև այդ խառնուրդին ենք ավելացնում կաթում լուծված խմորիչը, աստիճանաբար ալյուր ավելացնելով փափուկ խմոր հունցում։ Խմորը թողնում ենք 40 րոպե հանգստանա։ - Խմորը երկու հավասար մասի ենք բաժանում. այդպես ավելի հարմար է գրտնակել և կարկանդակներ ձևավորել (կարկանդակները կլինեն ավելի կոկիկ և քանակային առումով ավելի շատ )։ Միջուկը լցնում ենք յուրաքանչյուր շերտի վրա:
- Ռուլետի տեսքով փաթաթում ենք և օղակաձև կտրատում։ Կարող ենք մի քիչ քունջութ լցնել վրան։
- Թողնում ենք 10-15 րոպե, այդ ընթացքում էլ ջեռոցը կտաքանա։
Թխում ենք 20 րոպե 200 աստիճան տաքացրած ջեռոցում։ Ահա և պատրաստ են գեղեցիկ, վարդագույն և անուշաբույր կարկանդակները։

Այս համադրությամբ շատ համեղ պանրով կարկանդակներ են ստացվում, սակայն եթե չունենք սուլուգունի պանիր, կարող ենք այլ տեսակի պանրով փոխարինել այն:)
