Խոզի բուդ՝ հայկական ամանորյա սեղանի համար

Հայաստանում ամանորյա սեղանի գլխավոր զարդը սովորաբար հավի բուդն է լինում: Յուրաքանչյուր «նորմալ» հայկական ընտանիքի սեղանին պետք է այն լինի, եւ բոլոր հյուրերն անպայման գոնե մեկ կտոր պետք է համտեսեն: Առանց խոզի բդի ամանորյա տոնի զգացողություն չկա՝ չնայած արդեն հունվարի 2-ին շատերը չեն կարողանում նայել դրան: Բայց առանց այդ ուտեստի անհնար է պատկերացնել ամանորյա սեղանը:
Այդ առիթով որոշեցի խոզի բդի պատրաստման մի քանի ինքնատիպ բաղադրատոմս առաջարկել, որպեսզի «մեր բուդն ուրիշ է» պնդումը մերկապարանոց չլինի:
Եվ այսպես, ես անձամբ հավի բուդը լցոնում եմ սխտորով եւ կոճապղպեղով: Բացի այդ, այն գիշերը (իսկ երբեմն նույնիսկ մի ամբողջ օր) թողնում եմ մարինացվելու: Մարինացնելու համար մեզ անհրաժեշտ է մի քանի շիշ գարեջուր՝ կախված բդի չափսից, որպեսզի այն ամբողջությամբ գարեջրով պատվի: Մեկ սխտոր ու եւս 50 գրամ անցկացնում ենք քերիչով, ավելացնում աղ, պղպեղ, դափնու տերեւ, ուրց, չիլի պղպեղ: Այս ամենը լցնում ենք կաթսայի մեջ, մեկ շիշ գարեջուր լցնում, ստացված զանգվածի մեջ դնում լցոնված բուդն ու էլի գարեջուր ավելացնում:
Բուդը ջեռոցը դնելուց առաջ սոուս ենք պատրաստում: Դրա համար մեզ հարկավոր է մեղր, սոյայի սոուս, կիտրոնի հյութ, 2 ճ/գ մանանեխ: Բոլոր բաղադրիչները խառնում ենք այնքան, մինչեւ միասեռ զանգված ստացվի, քսում բդին, փաթաթում փայլաթիթեղով եւ ջեռոցը դնում: Փայլաթիթեղը բացելուց հետո բուդը պատում ենք պատրաստ սոուսով՝ կարմրացնելու համար:
Կարելի է խոզի բուդը պատրաստել նաեւ նարնջի սոուսով: Ինքնատիպ, նուրբ համ է ստացվում: Դրա համար առաջարկում եմ մսի վրա ճարպի բարակ շերտ թողնել: Սխտորով լցոնելու կարիք չկա: Այս տարբերակի պարագայում նույնպես հարկավոր է մարինացնել բուդը, այս անգամ՝ նարինջով:
Այսպես. հարկավոր է պատրաստել միսն ու դնել խորը տարայի մեջ՝ վրան 2-3 չկտրատած սխտոր դնելով: 2 նարնջի կեղեւը պարույրաձեւ մաքրել, 1 նարինջը շրջանակաձեւ կտրատել: 3 նարնջի եւ 1 կիտրոնի հյութ քամել, լցնել մսի վրա եւ 1-2 ժամ մարինացնել՝ պարբերաբար շրջելով բուդը: Այդ ընթաքում 3-4 պճեղ սխտոր մաքրեք, ավելացրեք աղ, պղպեղ, մեղր եւ պրովանսյան կանաչեղեն (կարող եք գտնել ցանկացած սուպերմարկետում): Մարինացնելուց հետո բուդը պատեք մեղրա-սխտորային խառնուրդով, դրեք ջեռոցը եւ ժամանակ առ ժամանակ ավելացրեք մնացյալ մարինադը: Ջեռոցից հանելուց 20 րոպե առաջ միսը պատեք նարնջի շրջանակներով եւ կեղեւով:
