Մայրաքաղաքայի՞ն, թե՞ «Օլիվիե». ի՞նչ ընդհանրություններ ունեն դրանք
ՀԱՆՐԱՀԱՅՏ ՄՈԼՈՐՈՒԹՅՈՒՆՆԵՐ«Օլիվիե» աղցանը, որը շատ հայտնի է եղել ԽՍՀՄ-ում և հիմա էլ հայտնի է հետխորհրդային երկրներում, հորինվել է 19-րդ դարի վաթսունական թվականներին ֆրանսիացի խոհարար Լյուսիեն Օլիվիեի կողմից: Բացի այն, որ Լյուսիենը խոհարար էր, նա նաև «Էրմիտաժ» պանդոկի տերն էր, որն այն ժամանակ գտնվում էր Մոսկվայի Տրուբնայա հրապարակում: Լյուսիենը Փարիզից տեղափոխվել էր Մոսկվա շատ երիտասարդ հասակում՝ նպատակ ունենալով գումար վաստակել, քանի որ այդ տարիներին ռուսները հարգում և բարձր էին գնահատում ֆրանսիական խոհանոցն ու ֆրանսիացի խոհարարներին:
Իր մակարդակով ռեստորանը բավականին նման էր իսկական փարիզյան ռեստորանի, և այդ ռեստորանի ֆիրմային ուտեստը «Օլիվիե» աղցանն էր: Լյուսիեն Օլիվիեն խստագույնս գաղտնի էր պահում այդ ուտեստի բաղադրատոմսը: Խոհարարի մահից ի վեր «Օլիվիե» աղցանի պատմությունը վերածվել է լեգենդների, և նույնիսկ համարվում է, որ հայտնի «Օլիվիե» աղցանի իրական բաղադրատոմսը կորել է: Այն գտնելու շատ փորձեր են եղել, բայց դրանից ոչ մեկը չի պսակվել հաջողությամբ:
1904 թվականին խոհարարները, իմանալով աղցանի հիմնական բաղադրիչները, կարողացել են վերականգնել «Օլիվիե» աղցանի հիմնական բաղադրատոմսը: Այսպիսով, ըստ նրանց, այդ աղցանը պատրաստելու համար հարկավոր է ձեռքի տակ ունենալ հետևյալ մթերքները՝ մեկ քառորդ ֆունտ խավիար, երկու աքարների խաշած փափկամիս, հորթի լեզու, 25 հատ շոգեխաշած խեցգետին, կես ֆունտ շոգեխաշած գազար, կես տուփ սոյայի մածուկ, երկու թարմ վարունգ, կես տուփ թթու վարունգ և հինգ խաշած ձու:
Սոուսը պատրաստելու համար հարկավոր է ֆրանսիական քացախ, երկու ձու, Պրովանսալ յուղ (ձիթապտուղ) և մեկ ֆունտ Պրովանսալ մայոնեզ: Բայց, այնուամենայնիվ, գուրմանները, որոնց բախտ էր վիճակվել համտեսել Լյուսիեն Օլիվիեի պատրաստած օրիգինալ աղցանը, պնդել են, որ այն շատ է տարբերվում նոր բաղադրատոմսով պատրաստված աղցանից:
Թերևս, կարելի է ասել, որ վերջացել է այն «Օլիվիե» աղցանի պատմությունը, որը հայտնի է եղել իր ժամանակակիցներին: Այժմ բոլորին է հայտնի, որ ներկայիս երշիկով կամ մսով պատրաստվող «Օլիվիե» աղցանը ոչ մի կապ չունի ֆրանսիացի հայտնի խոհարարի ստեղծած աղցանի հետ: Ժամանակակից և մեզ հայտնի «Օլիվիե» աղցանի բաղադրատոմսը հորինվել է Խորհրդային Միության տարիներին, և հենց այդ տարիներին էլ ամրագրվել է այդ աղցանի երկրորդ անունը՝ Մայրաքաղաքային (столичная), եթե պատրաստվում էր հավի կամ տավարի մսով:
Այն ժամանակ խեցգետիններով և այլ նուրբ համադամներով աղցանի պատրաստումը շատ դժվար էր, և այդ ամենը փոխարինվել է երշիկով (տավարի, հավի մսով), կանաչ ոլոռով, կարտոֆիլով և այլ մատչելի բաղադրիչներով: Նման կերպ սկսվել է նոր «Օլիվիե» աղցանի պատմությունը, որը ներկայումս էլ հանրահայտ և սիրելի է հետխորհրդային երկրներում:
