Պատրաստման եղանակը

Կարտոֆիը մաքրել և բաժանել 2 մասի: Միջուկը հանել ստանալով կարտոֆիլի «նավակներ»:

Շարել կաթսայի մեջ, ջուր լցնել, ավելացնել դափնու տերևը, աղը և եփել 5-7 րոպե:

Կարտոֆիը դուրս բերել ջրից:

Սունկը լվանալ, կտրատել ոչ մեծ կտորներով, սոխը մաքրել և բարակ կտրատել, կտրատված բանջարեղենները տապակել բուսայուղով մինչև պատրաստ լինելը, համեմել աղով, պղպեղով: Ավելացնել կարագը և լավ խառնել ու վերցնել կրակից:

Սուոսը պատրաստելու համար առանձին ամանի մեջ լցնել ալյուրը, թեթևակի աղ ավելացնել, ավելացնել սերուցքը. Եփել մարմանդ կրակի վրա մինչև ստացվի թթվասերի թանձրության զանգված:

Ստացված սոուսը ավելացել սունկի վրա և եփել մարմանդ կրակի վրա մինչև հեղուկը լիովին գոլորշիանա:

Ջեռոցի տապակի վրա յուղաթուղթ փռել, շարել կարտոֆիլները, լցնել սոուսով սունկը, եփել ջեռոցում 180 աստիճանի տակ 15 րոպե: Այնուհետև տապակը դուրս բերել ջեռոցից, ավելացնել քերած պանիրը և եփել ևս 5-10 րոպե: Պատրաստի ուտեստը զարդարել կանաչիով, լոլիկով կամ ըստ ցանկության:
