Ինչպե՞ս տան պայմաններում պատրաստել համեղ, քաղցր սուջուխ
LIFEՄեկ մետրանոց թելերի վրա շարում ենք թարմ ընկույզը և մի քանի օր կախում, որպեսզի լավ չորանա: Դոշաբից թանձր շփոթ ենք սարքում և թելի վրա շարած ընկույզը թաթախում մեջը:
Կախում են, տակը դնում փոքրիկ պնակներ, որպեսզի շարոցից ծորածները հավաքվեն մեջը: Մեկ ժամ հետո նորից ենք թաթախում շփոթի մեջ և կախած թողնում մինչև չորանալը:
Պատրաստելու համար պետք է ընտրել խոշոր, բարակ կեղև ունեցող ընկույզ, լցնել ջուրը և թողնել 5-6 ժամ: Ջրից հանել, ցամաքեցնել, զգուշությամբ ջարդել, այնպես, որ չփշրվեն միջուկները, երկու կես անել և շարել մոտ 1 մետր երկարությամբ վուշե թելի վրա:
Շարելուց հետո կախել պարանից, որ չորանա: Այդպես թողնել 4-5 օր: Շփոթը պատրաստելու համար վերցնել խաղողի խտացրած օշարակ (խաղողի հյութը եփել այնքան, որ մնա իր ծավալի կեսի չափ, եթե խաղողը քաղցր է, ավելի քիչ եփել): Կարելի է նաև դոշաբ օգտագործել, որը պետք է խառնել ջրին հավասար քանակությամբ և 30 րոպե եռացնել: Հետո ալյուրը ջրով բացել, անցկացնել թանզիֆի միջով և աստիճանաբար լցնել օշարակի կամ դոշաբի վրա:
Լավ խառնել, մինչև պնդանա: Պատրաստ լինելն իմանալու համար 1 գդալ շփոթ լցնել ափսեի մեջ և սառեցնել․ եթե դոնդողանման է, ուրեմն՝ պատրաստ է: Կրակից վերցնելուց 15 րոպե առաջ ավելացնել համեմունքներ: Թելով շարած ընկույզն ընկղմել շփոթի մեջ, մի քանի վայրկյան պահել, հանել և կախել չորանալու, թողնել 30-40 րոպե, նորից ընկղմել շփոթի մեջ և նորից կախել վերջնական չորանալու համար:
Կախանի տակ դնել ամաններ: Սուջուխի չորացումը տևում է 10-15 օր: Չորացած սուջուխը պետք է կտրատել 25-30 սմ երկարությամբ, թաթախել փշատի ալյուրի մեջ կամ բոված ալյուրի մեջ և պահել չոր, սառը տեղում: 10 կգ սուջուխի համար անհրաժեշտ է 2,5 կգ ընկույզի միջուկ, 26 լ խաղողի շիրա կամ 11-13 լ դոշաբ, 2,5 կգ ալյուր, 4 գ մեխակ, 4 գ դարչին, 6 գ հիլ:
