passion.ru–ն «Կերակուր շեշտադրումով. խոհարարական ճամփորդություն Հայաստան» վերնագրով հոդվածում գրում է, որ հայկական խոհանոցը այնքան հին է, ինչքան հին է հայկական հողը: Խոհարարական ավանդույթները Հայաստանում 2000 տարվա պատմություն ունեն: Հենց այստեղից են տարածվել կովկասյան խոհանոցի ավանդույթները, և այդ իսկ պատճառով հայկական խոհանոցի խորտիկները բոլորին ծանոթ են և սիրելի: Ավանդաբար Հայաստանում կերակուր պատրաստել են կավե վառարանում՝ թոնիրում: Թոնիրում հաց են թխում, ապուր են եփում, ձուկ ու թռչուն կարմրեցնում, բանջարեղեն ու ապուրներ եփում և այլն: Կերակուր պատրաստելու ամանները ևս կավից են, որոնց մեջ անհնար է տապակել, կարելի է միայն եփել: Ազգային կերակրատեսակների մեծ մասը բավականին բարդ է և պատրաստվում է երկար ժամանակամիջոցում: Հայերի մոտ խոհանոցի սյուներից մեկը ապուրներն են: Ընդ որում, այնտեղ ապուր ուտում են ոչ միայն ճաշին, այլ նաև նախաճաշին: Օրինակ՝ խաշը, որը պատրաստում են տավարի ոտքերից: Մյուս հանրահայտ ապուրը սպասն է, որը ուտում են ինչպես տաք, այնպես էլ սառը վիճակում: Խոհանոցի երկրորդ բաղադրիչն, իհարկե, մսային ուտեստներն են՝ խորոված, բաստուրմա, տոլմա, թռչնամիս և այլն: Կան նաև յուրահատուկ ուտեստներ, օրինակ՝ տժվժիկը, որը պատրաստում են կենդանիների ներքին օրգաններից: Քաղցր ուտեստներից ամենահայտնիներն են գաթան ու նազուկը, որոնք շերտավոր խմորեղեններ են: Եվ իհարկե աննկարագրելի համեղ են հայկական մուրաբաները, քանի որ Հայաստանում արև շատ է լինում, և մրգերը անասելի համեղ են լինում: Այստեղ անգամ դդմից, ձմերուկից և վարդի թերթերից են մուրաբա պատրաստում:
