Ինչպե՞ս մշակել խոզի բուդը, ինչքա՞ն ժամանակ դնել աղաջրի մեջ և ինչպե՞ս եփել, որ շատ համեղ, սպիտակ և գեղեցիկ ստացվի

Բդի ներսի կողմից (ճարպի հակառակ կողմից) միսը տեղ-տեղ դանակով ծակծկել (որպեսզի մսի արյունը հեշտ դուրս տա), մաքրել բդի արտաքինը և լվանալ սառը հոսող ջրով։ Եթե ճարպի շերտը բդի վրա շատ հաստ է, ցանկալի է ավելորդ ճարպը զգուշորեն կտրել և հեռացնել, բդի վրա թողնելով միայն մոտ 1 — 1,5 սմ հաստությամբ ճարպի շերտ։

Լվալուց հետո խոզի բուդը դնել մեծ թասի կամ կաթսայի մեջ և վրան լցնել սառը աղաջուր (աղաջուրը պատրաստելու համար մոտ մեկ բուռ աղը բավական է) մինչ բուդը ամբողջությամբ ծածկվի աղաջրով։  Բուդը (թասը աղաջրով) տեղափոխել և դնել սառը տեղ (ապահովել +1 ից +5 աստիճան տաքություն) և թողնել մնա 12 ժամից մոտ 1 օր։ Այդ ժամանակահատվածում ցանկալի է խոզի բուդը թասի մեջ 2-3 անգամ տեղաշարժել այս ու այն կողմ, մսի արյունը լավ դուրս տալու համար։

Նշված ժամանակից հետո թասից թափել ամբղջ աղաջուրը և թողնել բուդը թասի մեջ (ճարպի կողմը դեպի վեր) մոտ 1 ժամ, որպեսզի արնաջուրը մսի միջից հնարավորին լավ քամվի։

Բուդը համեմելու (բաստուրմա անելու) համար հիմնականում անհրաժեշտ է 3-4 հատ մեծ գլուխ սոխ, 1-2 գլուխ սխտոր, աղ, աղացած սև և կարմրր պղպեղ։

Սոխը մաքրել և մանր կտրատել։ Սխտորները մաքրել, պճեղները երկայնությամբ կտրատել, բաժանելով 3-4 մասի։ Բուդը հանել թասից, թողնել մի քիչ չորանա, մաքրել թասը արնաջրից։ Նորց դնելով թասի մեջ, բդի վրա ամբողջությամբ աղ ցանել (մոտ մեկ բուռ), կարմիր և սև աղացած պղպեղ ըստ ճաշակի։

Սոխը ձեռքերով ճզմել և լցնել բդի վրա։ Բուդը թասի մեջ դնել ճարպի կողմը դեպի ներքև։  Բդի վերևի մասում միսը տեղ-տեղ դանակով խորը ծակծկել և կտրտած սխտորները մտցնել բացված անցքերի մեջ։ Պարտադիր չէ, բայց կարելի  է նաև 1-2 հատ գազար շրջանաձև կտրտել և մտցնել բացված անցքերի մեջ։

Ծածկել թասը և այն տեղափոխել սառը տեղ ( +1 ից +5 աստիճան տաքության) և թողնել այդ  վիճակով մնա 12 ժամից մոտ 1 օր լավ համեմվելու համար։

Խոզի բուդը փայլաթիթեղի մեջ

Հսմեմվելուց հետո բուդը հանել թասից, մաքրել վրայի օգտագործած սոխը։ Փայլաթիթեղի (ֆոլգա) ռուլոնից կտրել 3 հատ մոտ 70 սմ երկարությամբ փայլաթիթեղներ ու դրանք ուշադիր միացնել միմյանց։ Պատրսստված փայլաթիթեղով զգուշորեն փաթաթել խոզի բուդը  այնպես, որ բաց տեղ չմնա ու փայլաթիթեղը հանկարց չպատռվի, չծակվի

Եփելու համար փայլաթիթեղով փաթացած բուդը տեղափոխել նախորոք լավ տաքացրած ջեռոցի մեջ (միջին հատված) ու ապահովել +180 աստիճան ջերմություն։

Եփելուց հետո, բուդը հանել ջեռոցից, բացել փայլաթիթեղը ու հեռացնել։ Բդի վրա քսել կարմիր պղպեղի հետ խառնած մածնի կամ թթվասերի բարակ շերտ, տեղափոխել ջեռոց ու թողնել եփվի, կարմրի ևս 10 — 15 րոպե։
