Շամպայն. անգլիական խմիչք՝ ֆրանսիական «փաթեթավորմամբ»

Շամպայինը ստեղծվել է ֆրանսիայում։ Ֆրանսիացիների համար դա կարող է անակնկալ լինել, ինչ–որ տեղ նույնիսկ վիրավորական, բայց շամպայնը անգլիացիների գյուտն է:
Ըստ լեգենդի, 17–րդ դարում ապրած ֆրանսիացի բենեդիկտյան քահանա Պիեռ Պերիոնն է առաջին անգամ ստեղծել շամպայնը։ Իրականում հիշյալ քահանան ինքը չի հորինել, բայց մեծ դեր է ունեցել այդ խմիչքի որակական հատկությունները լավացնելու գործում (կուպաժավորում, խցանների օգտագործում)։ Այո, շամպայնն իր անունը ստացել է հենց համանուն Շամպայն նահանգի անունից, որը գտնվում է Ֆրանսիայում։ Իրականում դեռևս մի քանի դար առաջ անգլիացիները արդեն շամպայն էին խմում, իհարկե, ֆրանսիական խաղողից պատրաստված։
Շամպայնը խմորման արդյունքում ածխաթթու գազով հագեցած խմիչք է։ Պարզվում է՝ կարևորը ոչ թե այդ խմիչքը ստանալն է, այլ այդ տեսքով այն պահպանելը, որին էլ հենց կարողացել են հասնել անգլիացիները։ Անգլիան միշտ էլ եղել է ֆրանսիական գինիների ամենամեծ սպառողը։ 16– րդ դարում Ֆրանսիայի Շամպայն նահանգից բերված կանաչ գինիները անգլիացիները կրկնակի խմորում էին՝ շաքարավազ և խմորիչ ավելացնելով, հետո փակում էին ապակե տարաներում (Ֆրանսիայում գինին պահվում էր տակառներում, որոնք տրաքում էին ածխաթթու գազի ճնշումից, իսկ անգլիացիները իրենց ածխային վառարաններում կարողանում էին ապակե շշեր ստանալ)։ Բրիտանական արքայական ընկերության փաստաթղթերից բխում է, որ մեթոդը, որն այժմ կոչվում է «շամպայնացում», առաջին անգամ նկարագրվել է Անգլիայում 1662 թվականին: Ֆրանսիացիները հետագայում կատարելագործեցին պրոցեսը և արդեն 18–րդ դարում օրենսդրորեն ամրագրեցին շամպայնը որպես բացառապես ֆրանսիական արտադրանք։ Միացյալ Թագավորությունը հիմա էլ Ֆրանսիայի կողմից մատակարարվող շամպայնի խոշորագույն սպառողն է՝ տարեկան ներմուծել է 40 մլն շիշ: Սա Ֆրանսիայի ընդհանուր արտահանման շուկայի գրեթե մեկ երրորդն է։
Ընդունված է շամպայն խմել «բոկալ» բաժակներով։ Համարվում է, որ այդպես ավելի լավ է զգացվում ըմպելիքի համը և տեսանելի են լինում օդային պղպջակները:
Ըստ լեգենդի, համարվում է, որ գավաթի չափը համապատասխանում է ֆրանսիական թագուհի Մարի Անտուանետայի կրծքի չափին։
Լավ է, որ այն հեռավոր ժամանակներում սիլիկոնային կրծքեր չեն եղել, թե չէ մարդիկ շատ արագ կհարբեին։
