Ծիրանը հայկական միրգ է’ սիրված ողջ աշխարհում: Այն անչափ հյութեղ է, ունի նուրբ և քնքուշ համ: Ցավալի է միայն, որ ծիրանի սեզոնը երկար չէ: Բայց սա մեծ խնդիր չէ, քանի որ մարդիկ սովորել են երկարեցնել իրենց հաճույքը’ սիրելի մրգերից պատրաստելով ձմեռվա համար պահածոներ ու կոմպոտներ: Բայց այդ ամենն այնքան էլ օգտակար չէ մեր օրգանիզմի համար, քանի որ պարունակում են մեծ քանկությամբ շաքար: Մենք խորհուրդ ենք տալիս սիրելի մրգերից չիր պատրաստել: Վաճառքում հաճախ կարելի է հանդիպել վառ դեղին գունավորմամբ, հյութեղ տեսքով ծիրանաչրի, որ խիստ տարբերվում է նրանից, ինչ կստանաք, եթե տանը չորացնեք միրգը: Հավատացեք, որ գեղեցիկ տեսքը դեռ չի խոսում անվտանգության մասին: Նման ծիրանաչիրը պարունակում է քիմիկատներ, որոնք էլ երկար ժամանակ կանխարգելում են գունաթափումը: Նման վտանգավոր գնումներից խուսափելու համար ավելի լավ է պարզապես սովորել, թե ինչպես ճիշտ չորացնել ծիրանը տնային պայմաններում: Եվ այսպես’ տանը 1 կգ ծիրանաչիր պատրաստելու համար Ձեզ պետք կգա մոտ 4 կգ ծիրան: Ընդ որում, ծիրանները պետք է լինեն շատ հասունացած, բայց առանց վնասվածքների: Դրանք լավ լվանալուց հետո պետք է բաժանել երկու մասի, հանել կորիզն ու 10 րոպեով մտցնել կիտրոնաջրի մեջ /1 լ ջրին 8 թեյի գդալ կիտրոնի հյութ/: Այնուհետև պետք է ծիրանները տեղավորել որևէ ճաղավանդակի վրա’ միջի մասով դեպի վեր, և այնպես, որ մի ծիրանը չկպչի մյուսին: Լավագույն արդյունք ստանալու համար ցանկալի է չորացնել ծիրանը 3-4 օր արևի տակ, որից հետո կարելի է ավելի խիտ դասավորել ծիրաններն ու տեղափոխել ստվերոտ, բայց քամոտ վայր ու թողնել, որ դրանք վերջնական չորանան: Ծիրանաչիրն օժտված է բազմաթիվ օգտակար հատկություններով, որոնցից շատերով օժտված չէ հասուն միրգը: Սա է պատճառը, որ բժիշկները խորհորդ են տալիս հղի կանանց ու երեխաներին իրենց սննդակարգ ծիրանաչիր մտցնել: Կան ծիրանաչիր պատրաստելու շատ եղանակներ: Մեկի մասին արդեն խոսեցինք: Ներկայացնենք ևս երկու տարբերակ: 1. Կարելի է չորացնել ծիրանները առանց կորիզը հանելու: Դա կօգնի ներսում ավելի շատ վիտամիններ պահել: Այդպիսի չորացումը արևի տակ տևում է մոտ մեկ շաբաթ, որից հետո նոր կարելի է ծիրանները ստվերոտ, քամոտ տեղ տեղափոխել: 2. Ընդունված է նաև ծիրանաչիրը ջեռոցում պատրաստելը: Նման չորացման համար ևս պետք է նախապես կիսել ծիրաններն ու 10 րոպեով թողնել դրանք կիտրոնաջրի մեջ: Ծիրանաչիր պատրաստելու այս եղանակը տևում է մոտ 1-2 ժամ: Ընթացքում կարևոր է թույլ չտալ, որ ջերմաստիճանն անցնի 120 աստիճանից, քանի որ մրգերը կարող են վառվել: Ընթացքում նաև պետք է պարբերաբար թափահարել այն ցանցը, որի վրա ծիրաններն են դրված: Բնական է, որ ջեռոցի դուռը փակել չի կարելի:
