Ժուլիենը անչափ համեղ կերակրատեսակ է, որը պատրաստելը հեշտ է, թեեւ որոշ տնային տնտեսուհիներ դժգոհում են, որ չեն կարողանում այն պատրաստել այնպես, ինչպես հմուտ խոհարարները։ Համեղ ժուլիենի գաղտնիքը նրա սոուսն է, որից էլ հաճախ դժգոհում են այն պատրաստողները։
Բեշամել սոուսը պատրաստելու գաղտնիքը շատ տաք կաթի եւ անդադար խառնելու մեջ է։ Ստորեւ ներկայացնում ենք հավով եւ սնկով ժուլիենի պատրաստման եղանակը։
Բաղադրամասեր՝
Հավի կրծքամիս, շամպինիոններ, 1 գլուխ սոխ, կարագ, ալյուր, կաթ, աղ։
Պատրաստման եղանակը՝
Սոուսի պատրաստման համար հարթ հատակով տապակի մեջ հալեցրեք 1 ճ գդալ կարագը, ավելացրեք 1,5 ճ գդալ ալյուր, տապակեք երկու րոպե՝ անընդհատ խառնելով, ապա վերցրեք կրակի վրայից, սպասեք՝ մինչեւ այլուրի վրայից պղպջակներն անհետանան, ապա արագորեն լցրեք շատ տաք կաթը։ Տապակը կրկին դրեք կրակի վրա, խառնեք զանգվածը եւ եփեք այնքան, մինչեւ թանձրանա։
Հավի կրծքամիսը, շամպիոնները եւ սոխը մանր կտրատեք եւ ձեթով տապակեք՝ մինչեւ սնկից դուրս եկած հյութն ամբողջովին գոլորշիանա, ապա վերցրեք կրակի վրայից։ Առանձին տարաների կամ ընդհանուր թավայի հատակը պատեք կարագով, լցրեք հավի եւ սնկի զանգվածը, ապա վրան ավելացրեք նախապես պատրատսված սոուսը։ Վերջում սոուսի վրայից քերած պանիր ավելացրեք, ապա դրեք ջեռոցն ու թխեք 10 րոպե։
