Պատրաստման եղանակ
Ջրի մեջ մի քիչ աղ ենք լցնում և դնում կրակի վրա։ Եռման աստիճանի հասցնելուց հետո, քափը մաքրում ենք և արագորեն կրակի վրայից վերցնում։
Թողնում ենք թևիկներն արգանակի մեջ սառեն։ Որպես գաղտնիք, ասեմ, որ հավը հենց այդպես է ավելի համեղ ստացվում. եռալուց հետո կրակի վրայից վերցնում ենք և թողնում ենք սառչեն։ Եթե շատ ենք վախենում, կարող ենք մոտ 5 րոպե էլ եռացնել։ Թևիկները հանում ենք, ալյուրի մեջ թաթախում ենք, այնուհետև թաթախում ենք ձվով և կաթով պատրաստված զանգվածի մեջ (льезон)։ Եթե ուզում ենք, կծու լինի, կաթով և ձվով զանգվածին պապրիկա և կծու պղպեղ ենք խառնում։ Եթե ուզում ենք կարող ենք սխտոր էլ ճզմել մեջը, կարող ենք նաև մի քիչ աղ անել։ Ամբողջ գաղտնիքը պաքսիմատի մեջ է, որի մեջ էլ պետք է թաթախենք թևիկները։ Վերցնում ենք եգիպտացորենի փաթիլները, ձեռքերով մանրացնում ենք։ Ձվով զանգվածի մեջ թաթախելուց հետո թաթախում ենք եգիպտացորենի փաթիլների մեջ։
Այժմ 10 րոպե հանգիստ ենք թողնում, այնուհետև շրջում ենք հակառակ երեսի վրա և հանգիստ ենք թողնում։ Ձուն արագ է չորանում և 20 րոպե անց կներծծվի թևիկների մեջ։ Բուսայուղով պատված կաթսան տաքացնում ենք։ Թևիկն ընկղմում ենք բուսայուղի մեջ, եթե պղպջակներ են առաջանում, ուրեմն ժամանակն է տապակելու։ Պետք է շատ արագ տապակենք` 30-60 վայրկյանի ընթացքում։
Պատրաստի թևիկները դնում ենք անձեռոցիկի վրա, որպեսզի շատ ձեթոթ չլինի, ապա մատուցում:
