Իդեալական ձվածեղ պատրաստելու հնարքներ
PHOTOՈրոշ երկրններում ձվածեղն ուտում են միայն լոլիկով. սկզբում կտրատած լոլիկը տապակում են թավայի մեջ, հետո ավելացնում են անհրաժեշտ քանակությամբ հարած ձու։
Վերջին տարիներին ձվածեղը դարձել է այնքան համապիտանի ուտեստ, որ նրա մեջ ավելացնում են ոչ միայն լոլիկ, այլ նաև պանիր, խոզապուխտ, երշիկ, տապակած միս, սունկ, սոխ, տապակած բանջարեղեն, պաստեղ և այլն՝ տարբեր համադրություններով ու տարբերակներով։
Թթուլավաշով (պաստեղով) ձվածեղ
Հայաստանում այն նույնպես լայնորեն տարածված ուտեստ է։ Զուտ ձվածեղի վրա հաճախ լցնում են մեղր կամ մածուն: Ավանդական սովորությամբ, զոքանչները փեսաներին պատվում էին ձվածեղով։ Որպես շուտ ապաքինող կերակուր, ձվածեղով են կերակրում նոր ծննդաբերած կնոջը։
Ջվածեղը կլինի փարթամ, եթե ավելացնեք սառը ջուր և լավ հարեք: Ձուն անպայման պետք է ամբողջական լինի, այսինքն դեղնուցը չպետք է պատռվի և առանձնանա սպիտակուցից, իսկ խառնած ձվածեղի համար:
Ձվի սպիտակուցը ավելի արագ կվերածվի փարթամ փրփուրի,եթե նախապես այն սառեցնեք և ավելացնեք մի քանի կաթիլ կիտրոնի հյութ: Իսկ դեղնուցի հետ հակառակը, այն սիրում է տաքություն և շաքար: Որպեսզի ձվերը եփվելուց չպայթեն, պետք է լվանալ մինչև եփելը սառը ջրով։ Որպեսզի յուղը (կարագը) տապակվելիս չցայտի պետք է տապակին քիչ աղ ցանել:
