Խորովածը կարո՞ղ է օգտակար լինել առողջության համար

Սովորաբար նիհարող եւ առողջ կենսակերպ վարող մարդկանց խորհուրդ են տալիս սահմանափակել կարմիր եւ տապակած մսի օգտագործումը: Սակայն խորովածը գուցեեւ այնքան վտանգավոր չէ, որքան ոմանք կարծում են: Տորոնտոյի համալսարանի գիտնականները պնդում են, որ ժամանակ առ ժամանակ խորոված ուտել ոչ միայն կարելի է, այլեւ կարող է օգտակար լինել:
Գիտնականների խոսքով, խորովածի սիրահարները մսի հետ հակաօքսիդանտների չափաբաժին են ստանում` նյութերի, որոնք մարդու բջիջները պաշտպանում են ազատ ռադիկալների կողմից վնասվելուց: Հայտնի է, որ հակաօքսիդանտները պայքարում են տարիքային հիվանդությունների, այդ թվում` քաղցկեղի, կատարակտի, սրտանոթային հիվանդությունների, ուղեղի կաթվածի եւ հոդացավի դեմ:
Խորովածի դեպքում այդ հակաօքսիդանտները պարունակվում են խորովածի մարինացման համար օգտագործվող կանաչեղենում եւ համեմունքներում: Գիտնականների խոսքով, խորովածը բացառիկ է նրանով, որ այդ ուտեստում օգտակար սննդանյութեր կան, որոնք մսի մեջ են հայտնվում մարինացման ընթացքում եւ նրանում պահպանվում են նույնիսկ մանղաղի վրա խորովվելու ընթացքում:
Մասնագետները մարինացված մսի տարբեր նմուշներ են փորձարկել` պարզելու դրանցում հակաթթվեցնող բաղադրիչների մակարդակը: Նրանք պարզել են, որ մարինադով մշակված, սխտոր, մեղր, կարմիր պղպեղ, կիտրոնային պղպեղ, կանաչի եւ կոճապղպեղ պարունակող միսն առանձնանում է հակաօքսիդանտների առանձնահատուկ բարձր խտացմամբ: Այդ պատճառով գիտնականները խորհուրդ են տալիս խորովածը մարինացնել վերոհիշյալ նյութերի օգտագործմամբ:
