Քաղցր և համեղ ձմերուկ ընտրելու համար գոյություն ունի մի քանի կանոն:
Չափը
Իդեալական չափը ձմերուկի միջին չափն է՝ 5-7 կգ:
Տղա և աղջիկ
Ձմերուկը տարբերվում է «սեռային» նշաններով. «Տղաները» մեծ են և երկարավուն: «Աղջիկները» ավելի փոքր են և ավելի կլոր: «Աղջիկները» ավելի համեղ են և քաղցր:
Պոչը
Այն անպայման պետք է լինի: Դեղնավուն չոր պոչը հասունության նշան է, իսկ եթե պոչը կանաչ է, ձմերուկը քաղել են անհաս վիճակում:
Կտկտոցով
Հասուն ձմերուկն արձակում է բարձր ձայն: Իսկ եթե այն վերևից և ներքևից թեթև սեղմեն, ապա կճաքի:
Կտրելով
Շատ վաճառողներ կտրում են այն, որպեսզի գնորդին ցույց տան հասած լինելը: Այդպիսի բան պետք չէ անել, քանի որ ձմերուկը ակնթարթորեն իր մեջ է հավաքում դանակի կեղտը, բակտերիաներ և փոշի:
