Ի՞նչ կապ ունի «պարսկական խնձորը» Չինաստանի հետ. «Փաստ»
ՀԱՆՐԱՀԱՅՏ ՄՈԼՈՐՈՒԹՅՈՒՆՆԵՐ
«Փաստ» օրաթերթը գրում է.
Երևի թե աշխարհում քչերն են, որ դեղձ չեն սիրում, բայց վերջիններիս մեջ քիչ չեն նրանք, ովքեր ոչ թե չեն սիրում, այլ ունեն հոգեբանական անտանելություն հատկապես դրա կեղևի առումով:
Դեղձը (Prunus persica) վարդազգիների ընտանիքին պատկանող կորիզավոր պտուղ է։ Այն հայտնի է իր հյութալի, քաղցր միջուկով և թավշյա կեղևով։ Գոյություն ունեն դեղձի բազմաթիվ սորտեր՝ դեղին, սպիտակ և կարմրավուն միջուկով։
Դեղձի բնական ծագման կենտրոնը համարվում է Չինաստանը։ Հնագիտական և գենետիկական տվյալները ցույց են տալիս, որ դեղձը Չինաստանում մշակվել է հազարավոր տարիներ առաջ՝ առնվազն մոտ 4000 տարի առաջ։ Չինաստանից դեղձը աստիճանաբար տարածվել է դեպի Կենտրոնական Ասիա, Պարսկաստան, Հայաստան և Մերձավոր Արևելք, իսկ հետագայում՝ Միջերկրածովյան տարածաշրջան և Եվրոպա։
Հետաքրքիր է, որ լատիներեն գիտական անվանումը՝ Prunus persica, բառացիորեն կապված է ոչ թե չինական, այլ «պարսկական» անվան հետ։ Հին հռոմեացիները դեղձը ճանաչել են որպես Persian apple («պարսկական խնձոր»), քանի որ այն Եվրոպա էր հասել Պարսկաստանի միջոցով։ Սակայն հետագա ուսումնասիրությունները հաստատել են, որ դրա իրական ծագման երկիրը Չինաստանն է։
Շատերին է երևի հետաքրքիր, թե ի՞նչ է իրենից ներկայացնում նեկտարինը: Դեղձը և նեկտարինը նույն բուսաբանական տեսակն են՝ Prunus persica։ Բայց նեկտարինի հարթ կեղևը դեղձի որոշակի բնական գենետիկական տարբերակի արդյունք է։
Չինաստանում դեղձը ավանդաբար համարվել է երկարակեցության և անմահության խորհրդանիշ։ Դեղձի կորիզի ներսում գտնվող սերմը պարունակում է ամիգդալին, և այն չպետք է օգտագործել մեծ քանակությամբ։
Դեղձի ծաղկումը վաղ գարնանը այն դարձրել է նաև բազմաթիվ մշակույթների գեղարվեստական և խորհրդանշական թեմա։ Դեղձը տարածվել է աշխարհում ոչ միայն սերմերով, այլ նաև պատվաստման և սորտային բազմացման միջոցով։ Այսօր գոյություն ունեն դեղձի հսկայական թվով տեսակներ՝ տարբեր չափերով, գույներով, համով և հասունացման ժամկետներով։
Դեղձը Հայաստանում վաղուց մշակվող և լայնորեն տարածված պտղատեսակներից է։ Հայաստանի կլիմայական պայմանները, հատկապես տաք և արևոտ շրջանները նպաստավոր են դեղձի այգեգործության համար։ Դեղձի այգիներ կարելի է հանդիպել Հայաստանի տարբեր մարզերում։ Տեղական արտադրանքը հիմնականում շուկա է դուրս գալիս ամռան ամիսներին: Հայկական դեղձը հայտնի է իր քաղցրությամբ, բույրով և հյութալիությամբ։ Հայաստանում աճեցվում են դեղձի տարբեր տեսակներ՝ ինչպես թարմ օգտագործման, այնպես էլ պահածոյացման և վերամշակման համար։
Դեղձը Հայաստանում պարզապես գյուղատնտեսական մշակաբույս չէ. այն ամառային սեզոնի ամենահայտնի տեղական մրգերից է։ Հայկական շուկաներում այն սովորաբար հայտնվում է ծիրանի, սալորի և նեկտարինի հետ նույն ժամանակահատվածում։
