Վերջին ուսումնասիրությունները ցույց են տալիս, որ շուկայում վաճառվող որոշ ձկնկիթների մեջ կարող են առկա լինել քիմիական նյութեր, որոնք լուրջ հարցեր են առաջացնում սննդի անվտանգության տեսանկյունից։ Մասնագետների խոսքով՝ հատկապես զանգվածային արտադրության և էժան ձկնկիթի դեպքում հաճախ կիրառվում են արհեստական ներկանյութեր, կոնսերվանտներ և համի ուժեղացուցիչներ՝ արտադրանքի տեսքը և պահպանման ժամկետը երկարացնելու համար։

Սննդի անվտանգության փորձագետները նշում են, որ ձկնկիթին երբեմն ավելացվում են սինթետիկ ներկանյութեր՝ նարնջագույն կամ կարմիր ավելի «գրավիչ» գույն ապահովելու նպատակով։ Բացի այդ, հայտնաբերվել են կոնսերվանտներ, որոնք թույլատրելի չափաբաժինները գերազանցելու դեպքում կարող են բացասաբար ազդել օրգանիզմի վրա։

Բժիշկների տվյալներով՝ նման քիմիական նյութերի հաճախակի օգտագործումը կարող է առաջացնել ալերգիկ ռեակցիաներ, սրտխառնոց, մարսողական խնդիրներ, ինչպես նաև գլխացավեր։ Ռիսկի խմբում են երեխաները, հղի կանայք և սրտանոթային ու լյարդի խնդիրներ ունեցող մարդիկ։

Մասնագետները զգուշացնում են նաև մեկ այլ վտանգի մասին․ ձկնկիթի մեջ կարող են կուտակվել ծանր մետաղներ և շրջակա միջավայրից եկող աղտոտիչներ, եթե ձուկը աճեցվել կամ որսվել է էկոլոգիապես վտանգված ջրերում։ Սա ևս մեկ անգամ ընդգծում է, որ խնդիրը միայն արտադրողը չէ, այլ նաև հումքի ծագումը։

Փորձագետները խորհուրդ են տալիս ձկնկիթ գնել միայն վստահելի խանութներից, ուշադիր կարդալ պիտակի բաղադրությունը, խուսափել չափազանց վառ գույն ունեցող արտադրանքից և կասկածելի ցածր գնից։ Բնական ձկնկիթը սովորաբար ունի մեղմ հոտ և ոչ միատարր գույն։

Ձկնկիթը շատերի համար տոնական սեղանի անբաժան մասն է, սակայն մասնագետները հիշեցնում են՝ գեղեցիկ տեսքը կարող է խաբուսիկ լինել։ Ճիշտ և տեղեկացված ընտրությունը առողջության պահպանման կարևոր քայլ է։
