«Մայրաքաղաքային» աղցանը (հայտնի նաև որպես Օլիվիե) շատերի համար տոնական սեղանի անբաժան մասն է։ Սակայն մասնագետները զգուշացնում են՝ այս անվնաս աղցանը բոլորի համար չէ, և որոշ մարդկանց մոտ կարող է առողջական լուրջ խնդիրներ առաջացնել։

Առաջին հերթին աղցանը խորհուրդ չի տրվում աղեստամոքսային համակարգի հիվանդություններ ունեցողներին։ Մայոնեզի բարձր յուղայնությունը, երշիկը կամ խաշած միսը, ինչպես նաև խաշած կարտոֆիլի ու ոլոռի համադրությունը ծանր բեռ են ստեղծում ստամոքսի և ենթաստամոքսային գեղձի համար։ Գաստրիտ, խոց, պանկրեատիտ ունեցող մարդկանց մոտ այն կարող է առաջացնել ցավ, փքվածություն և սրացումներ։

Շաքարային դիաբետ ունեցողները նույնպես պետք է զգույշ լինեն։ Կարտոֆիլը, գազարը և պահածոյացված ոլոռը բարձր գլիկեմիկ ինդեքս ունեն, իսկ մայոնեզը պարունակում է թաքնված շաքարներ և ճարպեր, որոնք կարող են արագ բարձրացնել արյան գլյուկոզայի մակարդակը։

Աղցանը ցանկալի չէ նաև սրտանոթային հիվանդություններ և բարձր խոլեստերին ունեցող անձանց։ Մայոնեզը, երշիկեղենը և ձվերը հարուստ են հագեցած ճարպերով, որոնք կարող են նպաստել խոլեստերինի բարձրացմանը և սրտի աշխատանքի վատթարացմանը։

Առանձին խումբ են կազմում ալերգիկ մարդիկ։ Ձուն, մայոնեզը, պահածոյացված բաղադրիչները և երշիկեղենը հաճախ հանդիսանում են ալերգեններ, որոնք կարող են առաջացնել մաշկային ցան, քոր կամ մարսողական խանգարումներ։

Բացի այդ, «մայրաքաղաքային» աղցանը վտանգավոր է սննդային թունավորման տեսանկյունից, եթե այն երկար ժամանակ պահվում է սենյակային ջերմաստիճանում։ Մայոնեզով աղցանները արագ են փչանում և կարող են դառնալ բակտերիաների բազմացման աղբյուր։

Եթե ունեք վերը նշված առողջական խնդիրներից որևէ մեկը, ավելի լավ է հրաժարվել «մայրաքաղաքային» աղցանից կամ ընտրել թեթևացված տարբերակ՝ առանց մայոնեզի, երշիկի և պահածոյացված բաղադրիչների։ Տոնական սեղանը կարելի է համեղ դարձնել նաև առանց առողջությանը վնաս հասցնելու։
