«Փաստ» օրաթերթը գրում է.

Բակալ յաուն (պորտուգալերեն bacalhau — ձողաձուկ) աղ դրված և չորացրած շատ աղի ձուկ է։ Այն համարվում է Պորտուգալիայի ավանդական սննդամթերքներից մեկը, որն օգտագործվում է պորտուգալական բազմաթիվ ուտեստներում։ «Հավատարիմ ընկեր» (Fiel amigo). այդպես են պորտուգալացիները անվանում բակալ յաուն։ Չորացրած ձողաձուկը, որը հայտնի է ամբողջ Եվրոպայում (ինչու ոչ՝ նաև աշխարհում), Պորտուգալիայում ավելին է, քան պարզապես սնունդ։ Դարերի ընթացքում աղ դրած և չորացրած ձողաձուկը սովորական արտադրանքից վերածվել է պորտուգալական ինքնության խորհրդանիշի։

Կա կարծիք, որ վիկինգներն են եվրոպացիներին ծանոթացրել չորացրած ձողաձկան հետ: Նորվեգիայի ափերին շատ ձողաձուկ կար, իսկ ձկան չորացման համար իդեալական ձմեռային պայմանները հնարավորություն էին տալիս մշտապես ունենալ թույլ աղի չորացրած ձուկ՝ տյորֆիսկ: Վիկինգները, սկսելով իրենց եվրոպական արշավանքները 759 թվականին, արդեն 844 թվականին հասան Իսպանիայի և Պորտուգալիայի ափեր: Եվ այդ ծովային արշավանքներում կարևոր դեր էր տրվում այն փաստին, որ նրանք կարող էին ճանապարհին, ի դեմս տյորֆիսկի, ուտել գրեթե մաքուր սպիտակուցային խտանյութ: Վիկինգներն ունեին ձողաձուկ և... ցուրտ, ինչը թույլ էր տալիս նրանց ստանալ չորացրած ձուկ: Բայց նրանք քիչ աղ ունեին: Բասկերն ունեին ձողաձուկ, բայց ցուրտ չկար, փոխարենը կար աղ, և նրանք ստեղծեցին չորացրած ձուկ պատրաստելու իրենց սեփական եղանակը՝ շատ աղով չորացնելը, այսինքն՝ բակալ յաուն: Կա կարծիք, որ նման ապխտած ձկներ բասկերի մոտ հայտնվել են դեռ 11-րդ դարի սկզբին: Ավելի ճշգրիտ, ըստ նրանց, հենց այդ ժամանակվանից են իրենք վիկինգներից փոխառել ձողաձուկ ապխտելու եղանակը:

Բայց վերադառնանք Պորտուգալիային: Բիսկայան ծոցում քիչ ձողաձուկ կա, իսկ Պորտուգալիայի Ատլանտյան ափին ընդհանրապես չկա, և ձողաձուկ որսալու համար բասկերն ու պորտուգալացիները մտնում էին օվկիանոս։ Բակալ յաուն, լինելով բարձր որակի սպիտակուցային խտանյութ, պորտուգալացիներին թույլ տվեց կատարել աշխարհագրական հայտնագործություններ, կազմակերպել առևտրային կետեր և ստրկավաճառական ֆերմաներ: Պորտուգալացի նավաստիների և առևտրականների հետ միասին բակալ յաուն հասավ նաև պորտուգալական գաղութներ: Դրա սպառումը աճեց։ Եթե ափամերձ տարածքներում կար թարմ ձուկ, ապա ներքին շրջանների համար աղ դրած և չորացրած ձուկը դարձավ սպիտակուցի հիմնական աղբյուրը։ Պորտուգալիայի կաթոլիկ բնակչության համար բակալ յաուն դարձավ ոչ միայն ամենօրյա, այլ նաև տոնական կերակուր:

Այսօր բակալ յաուի, Պորտուգալիայի և պորտուգալացիների միջև նույնականացումը ինքնըստինքյան է: Պորտուգալացիները դրա հիմնական համաշխարհային սպառողն են, Իսպանիան երկրորդն է: Ներկայում Պորտուգալիայում բակալ յաուն վաճառվում է որպես սովորական ապրանք՝ առանց ապրանքանիշի մասին տեղեկատվության: Հաճախորդները կարող են դիպչել, հոտոտել և այդ կերպ անձամբ ստուգել այն: Խանութներում վաճառվում է դրա լայն տեսականի, որը տարբերվում է գույնով, չափերով, հոտով, համով և չորությամբ:
