Էժան, թունդ, «զզվելի» խմիչք՝ թորման պարզունակ տեխնոլոգիայով. «Փաստ»
ՀԱՆՐԱՀԱՅՏ ՄՈԼՈՐՈՒԹՅՈՒՆՆԵՐ
«Փաստ» օրաթերթը գրում է.
Հանուն արդարության պետք է ասել, որ նույնիսկ այսօր եվրոպացիները քիչ բան գիտեն Արևելքի ալկոհոլային ավանդույթների մասին։ Շատերի համար ճապոնական սակեն մնում է միակ «արևել յան» ալկոհոլը։ Մինչդեռ գրեթե յուրաքանչյուր երկիր ունի իր ալկոհոլային խմիչքը. նույնիսկ այն երկիրը, որտեղ կրոնը դատապարտում է ալկոհոլի օգտագործումը։ Եվ, իհարկե, աշխարհի ամենաբնակեցված երկիրը՝ Չինաստանը, չի կարող չունենալ իր ազգային խմիչքը։ Նման մի քանի խմիչք կա, և դրանցից մեկը հանշինն է կամ՝ չինական ցորենի օղին (չնայած այն ցորենից չի պատրաստվում): Եվրոպացու համար դժվար կլինի այդ ըմպելիքը նուրբ անվանել:
Նրանք, ովքեր փորձել են իսլանդական Brennevin-ը, կարող են պատկերացնել, թե ինչպիսին է հանշինը՝ «չինական դառը օղին», որը արտաքնապես պղտոր է և ունի հատուկ հոտ։ Համը հիմնականում կախված է հումքից և թորողի հմտությունից։ Այդ ալկոհոլային խմիչքը ներկայում բացառիկ է, քանի որ այն արտադրվում է հիմնականում արհեստագործական գործարաններում՝ փոքր ծավալներով։ Հանշինի արտադրության համար օգտագործվում է գաո-լիանգը (կորեկ) կամ չումիզին (կերային և հատիկային հացահատիկային մշակաբուս)։ Հանշինի արտադրության տեխնոլոգիան ամենապարզունակ մակարդակում է։ Մեզանից շատերի կողմից օգտագործվող օղու թորման սարքերը շատ ավելի բարդ և արդյունավետ են, քան դրանց չինացի «գործընկերները»: Փաստացի ամբողջ սարքավորումը սահմանափակվում է խմորման փոսով և թորման սարքով:
Երկուսն էլ, որպես կանոն, գտնվում են սովորական տներում, որոնք չեն տարբերվում բնակելի շինություններից։ Խմորման փոսը հատակի խորշ է, որտեղ տեղի է ունենում շոգեխաշած հացահատիկի խմորումը, որը տևում է 15 օր։ Թորման ապարատը բաղկացած է սովորական օջախից, երկու կաթսայից, անոթից և պատրաստի արտադրանքը հավաքելու համար փայտե ափսեից։ Մոտ 500-600 տարի առաջ էին Շոտլանդիայում վիսկի արտադրում նմանատիպ եղանակներով: Իսկ չինացիները դեռ հավատարիմ են իրենց ավանդույթներին։ Ստացված արտադրանքը ունի մոտ 50-55 % թնդություն: Հանշինի մասին մի քանի առասպել կա։
Համարվում է, որ, օրինակ՝ հանշինը զզվելի է և կարելի է խմել միայն այն բանից հետո, երբ տաքացվի, որպեսզի եթերայուղերը գոլորշիանան։ Իրականում դա ճիշտ չէ։ Չումիզայից թորած հանշինն իսկապես շատ զզվելի ըմպելիք է, բայց եթե այն կաո-լիանգից է, ապա համը նման է կարտոֆիլի օղու, կամ էլ ոչ շատ լավ պատրաստված ցորենի օղու: Ի դեպ, հանշինն իր էժանության պատճառով այսօր էլ սիրված է Ռուսաստանի սահմանամերձ բնակչության շրջանում։
