Տոնական ուտեստներ պատրաստելու մի շարք պարզ կանոններ

ՀՀ Առողջապահության նախարարությունը հորդորում է տոնական ուտեստներ պատրաստելիս հետեւել մի շարք պարզ կանոնների.

Սնունդ պատրաստելուց առաջ եւ ընթացքում պետք է հաճախակի լվանալ ձեռքերը, հատկապես, եթե ձեռք եք տվել հում մթերքի, մասնավորապես` հում մսի: Պետք է մաքուր պահել մակերեսները եւ խոհանոցային պարագաները, որոնք օգտագործվում են սնունդ պատրաստելու ժամանակ:

Հում միսը, թռչնամիսը եւ ծովամթերքը պետք է զատել այլ սննդամթերքից: Եթե աշխատում եք հում մթերքի հետ, անհրաժեշտ է օգտագործել առանձին պարագաներ եւ պիտույքներ, օրինակ` դանակներ, մասնատման տախտակներ եւ այլն:

Պետք է ուշադիր լինել, որ գնումների ժամանակ հում միսը, թռչնամիսը եւ ծովամթերքն առանձին դրվեն այլ սննդամթերքից: Սառնարանում հում եւ պատրաստի սննդամթերքի շփումը կանխելու համար պետք է դրանք պահել փակ տարաներում՝ հումը տեղադրելով պատրաստի կամ ջերմային մշակում անցած մթերքից ներքեւ:

Սնունդ պատրաստելիս պետք է այն ենթարկել մանրազնին ջերմային մշակման: Նշենք, որ վնասակար մանրէները ոչնչանում են 70˚С-ից սկսած: Հարկավոր է մշտապես հետեւել, որ կերակուրը լինի լավ եփած կամ տապակած: Պատրաստի կերակուրը պետք է տաքացնել հանգամանորեն։

Պատրաստի մթերքը չի կարելի սենյակային ջերմաստիճանում պահել 2 ժամից ավելի: Աարագ փչացող եւ պատրաստի բոլոր մթերքները պետք է պահել սառնարանում 72 ժամից ոչ ավելի, իսկ մսային աղցանները եւ կերակրատեսակները` ոչ ավելի, քան 48 ժամ:

Չի խրախուսվում կերակուրը տաքացնել մեկ անգամից ավելի: Սառեցված մթերքը պետք է հալեցնել սառնարանային պայմաններում:

Մթերքը գնելիս անհրաժեշտ է ուշադրություն դարձնել պահպանման պայմաններին եւ պիտանիության ժամկետին՝ հատկապես շուտ փչացող մթերքի դեպքում:

Խորհուրդ է տրվում ընտրել թարմ, չվնասված մթերք: Նախապատվությունը տալ անվտանգության առումով որոշակի մշակում անցած՝ գործարանային մթերքին, օրինակ՝ պաստերացված կաթ եւ այլն:

Մրգերն ու բանջարեղենն օգտագործելուց առաջ պետք է մանրազնին լվանալ` խմելու, մաքուր, հոսող ջրով: Չի կարելի օգտագործել ժամկետանց մթերք:

Հարկ է խուսափել տնային պայմաններում պատրաստված պահածոներ օգտագործելուց կամ օգտագործելուց առաջ անհրաժեշտ է այն եռացնել 15-20 րոպե:

Եթե կասկած կա ջրի անվտանգության վերաբերյալ, ապա օգտագործելուց առաջ անհրաժեշտ է այն եռացնել:

Խորհուրդ չի տրվում գնել եւ սննդում օգտագործել անհայտ ծագման, չստուգված սնկեր: Սունկն անհրաժեշտ է գնել միայն շուկայից եւ խանութներից` համապատասխան իրավասու մարմնի կողմից տրված փաստաթղթի առկայության դեպքում:

Եթե վատ եք զգում, հատկապես, եթե առկա է սրտխառնոց, ցավ որովայնի շրջանում, մարսողության խանգարում եւ այլն, պետք է զերծ մնալ ընտանիքի եւ հյուրերի համար սնունդ պատրաստելուց։
