«Փաստ» օրաթերթը գրում է

Ջերմացնող ըմպելիքներ շատ կան: Սակայն կա ըմպելիքի մի հատուկ տեսակ, որը շատերն են սիրում խմել սառնամանիքից հետո, որպեսզի տաքանան, հյուրասիրեն ընկերներին և վայելեն խմիչքի համը: Խոսքն, իհարկե, Գլինտվեյն գինու մասին է: Գլինտվեյն գինու առաջացման պատմությունը մեզ տանում է Հին Հռոմ: Հենց այնտեղ են առաջին անգամ կարմիր գինիների հետ տարբեր համեմունքներ խառնելու փորձեր կատարել: Հռոմեացիներն այդ կերպ փորձել են բարելավել գինու համային հատկությունները, նրան տալ ավելի նրբահամ երանգ: Բացի այդ, համեմունքների ավելացումը ապահովել է դրանց օգտակար հատկությունների պահպանումը: Սակայն հռոմեացիները գինին չեն տաքացրել:

Ավելի ուշ միջնադարյան Եվրոպայում են սկսել տաքացնել համեմված գինիները: Դրա համար օգտագործվել են ֆրանսիական խաղողի այգիների գինիները: Մեզ ծանոթ Գլինտվեյն գինու բաղադրատոմսը կազմվել է 14-րդ դարի վերջին: Դրա հեղինակն առաջարկել է չոր կարմիր գինուն ավելացնել սև պղպեղ, դարչին, շաքար, կոճապղպեղ, մեխակ և մշկընկույզ: Այդ ժամանակից ի վեր այն համարվում է ավանդական Գլինտվեյն գինու բաղադրատոմսը: «Գրինտվեյն» անունը գալիս է գերմանական «gluhwein» - ից, որը կրճատված «gluhenderwein»-ն է և, համապատասխանաբար, թարգմանվում է որպես «տաք գինի»: Բանն այն է, որ համեմված գինին պետք է նաև տաքացնել: Հետագայում այդ գինին դարձել է բոլոր տեսակի եվրոպական տոնավաճառների անբաժանելի ավանդական ըմպելիքը: Ավելին, յուրաքանչյուր երկիր ունի տաքացրած գինու իր հատուկ բաղադրատոմսը. դրանք առաջացել են` հիմնվելով տեղի խոհարարական նախասիրությունների և ավանդույթների վրա: Տանը Գլինտվեյն պատրաստելու համար հարկավոր է հիշել մի քանի կանոն: Նախ՝ պետք է ստեղծագործ լինել պատրաստման գործընթացում, քանի որ սա յուրահատուկ փոքրիկ փորձ է, որի արդյունքը լինելու է տրամադրության և ֆանտազիայի արտացոլումը և մարմնացումը:

Գլինտվեյն գինու ամենատարածված բաղադրատոմսը բավականին պարզ է: Վերցվում է մեկ բաժին կարմիր կիսաքաղցր գինի՝ 200 մլ, դարչինի 1 ձող, 200 գ կտորով շաքար, կամ դրա փոխարեն՝ 1 գդալ մեղր, մի քանի հատիկավոր սև պղպեղ և մի քիչ մեխակ: Ըմպելիքը կարող է «համալրվել» նարնջի, խնձորի կամ կիտրոնի մի քանի շերտերով: Ցանկության դեպքում կարելի է ավելացնել ազնվամորի կամ հապալաս: Խորհուրդ է տրվում կաթսայում նախօրոք տաքացրած գինու մեջ լցնել համեմունքները: Ընդ որում, պետք չէ գինին հասցնել եռման աստիճանի, բավական է տաքացնել այն, իսկ համեմունքների հետ խառնելուց հետո թողնել հինգ րոպե թույլ կրակի վրա: Այսքանով Գլինտվեյնը պատրաստ է: Լավ հյուրընկալողը տաքացրած գինու հետ կմատուցի նաև որոշակի նախուտեստներ:

Կոճապղպեղով թխվածքը, շտրուդելը, պանիրը կամ սառը միսը լավագույնս են համապատասխանում դրան: Գլինտվեյնը պետք է մատուցել բարձր ապակե բաժակների մեջ: Եթե կարմիր գինի չունեք, ապա Գլինտվեյն պատրաստելու համար կարելի է օգտագործել նաև սպիտակ գինի: Այս դեպքում որպես նախուտեստներ համապատասխանում են ծովամթերքը կամ սուշին: Այսինքն, կարելի է ասել, որ Գլինտվեյն գինի պատրաստելը կարող է լինել ցանկացած մարդու սեփական գլուխգործոցը, միայն թե պահպանելով իսկական տաքացրած գինի պատրաստելու հիմնական կանոնները:
