«Փաստ» օրաթերթը գրում է

Գրեթե բոլորը գիտեն, թե ինչ է սակեն: Շատերը դա համարում են բրնձից պատրաստված օղու տեսակ: Սակայն այդպես չէ: Իրականում սակեն օղի չէ, այլ ալկոհոլային խմիչքների առանձին շարքի ներկայացուցիչ: Սակեի պատմությունը ոչ մեկ հարյուրամյակի է, այն բավականին հին է և, իհարկե, ծագել է Ճապոնիայում: Այս խմիչքի իրական անունը «նիհոնշու» է: Իսկ մեզ հայտնի «սակե» բառը տեղական ճապոնական ժարգոնից է, որը նման է նրան, եթե, ասենք, Ռուսաստանում օղուն անվանում են, օրինակ՝ «սպիտակ» կամ «դառը» խմիչք, իսկ մեզ մոտ՝ արաղ:

Բայց քանի որ «սակե» անունն ավելի լավ է արմատավորվել աշխարհում, խմիչքը սկսել են վաճառել այդ անունով: Այս ալկոհոլային ըմպելիքը պատրաստվում է բրնձի խմորմամբ կամ քացախմամբ: Քանի որ արտադրական գործընթացը ենթադրում է պաստերիզացում, այլ ոչ թե թորում, խմիչքն ավելի շուտ կարելի է վերագրել գարեջրի տարատեսակին, քան օղուն: Ավելին, սակեն ստացվում է անսովոր խմորմամբ, որն իր հատուկ անվանումը ունի՝ բորբոսային խմորում, ինչն ավելի ճիշտ է: Սակեի պատմության մեջ հետաքրքիր փաստ է այն, որ նախկինում եղել է այդ ըմպելիքը պատրաստելու ավանդական մեթոդ, որն ունեցել է իր յուրահատկությունը. խմորումն արագացնելու համար անհրաժեշտ է եղել բրնձի հատիկները ծամել և թքել տարայի մեջ: Ահա հենց այդպես են երկու հազար տարի առաջ այդ խմիչքի վարպետները սակե ստացել:

Ըմպելիքի բաղադրատոմսը ինքնին չի հորինվել Ճապոնիայի բնակիչների կողմից, նրանք որպես հիմք են վերցրել Չինաստանում բրնձի գարեջուր պատրաստելու սկզբունքները՝ այն նորարացնելով այնպես, որ սակեն ստացվի ավելի թունդ և ունենա իր յուրահատուկ համը: Սկզբում սակեն նախատեսված է եղել միայն կայսրերի և միապետների համար: Սովորական ճապոնացիների շրջանում այն տարածվել է միայն 10-րդ դարում: Զանգվածային արտադրության համար սկսել են օգտագործել կոձի բորբոսասունկը, որն էլ ճապոնացիներին փրկել է խմիչք ստանալու համար բրնձի հատիկներ ծամելու անհրաժեշտությունից, իսկ դա իր հերթին այդ խմիչքի պատրաստման գործընթացը ավելի հիգիենիկ է դարձրել: Սակեի արտահանումը եվրոպական երկրներ սկսվել է 17-րդ դարից: Կա կարծիք, որ սակեն պետք է խմել տաք վիճակում:

Իրոք, կարելի է այդպես էլ անել: Սակայն ճապոնական ասացվածքն ասում է. «Լավ սակեն խմում են սառը, իսկ վատը՝ տաք»: Այսինքն, տաքացրած սակեն համարվում է խմիչքի անորակության նշան, որը մարդիկ ուզում են թաքցնել՝ տաքացնելով այն: Հետաքրքիր է, որ ներկայումս Ճապոնիայում սակեն սկսել են գերադասել եվրոպական այլ ալկոհոլային խմիչքներից: Բացի այդ, բրնձի «օղին» արտահանվում է այլ բազմաթիվ երկրներ, հատկապես նման ըմպելիքի մեծ պահանջարկ ունեն Ֆրանսիան և ԱՄՆ-ը:
