Ինչպես պատրաստել մսով բաստուրմա

Տավարի մեջքի մասի փափուկ կտորներից կտրել 30 սմ երկարությամբ, 12 սմ լայնությամբ և 6 սմ հաստությամբ կտորներ: Մսի կտորները իրար կողքի դնել ամանի մեջ, վրան աղ լցնել, թողնել 2 օր, հետո մսի դիրքը փոխել այնպես, որ վերևի մասը մնա տակում և նորից թողնել 2 օր: Այնուհետև միսը թեթևակի լվանալ սառը ջրով և չորացնել փայտե վանդակաճաղերի վրա: Պատրաստի միսը շարքով դնել սեղանին, վրան ծակոտկեն կտոր փռել, կտորի եզրերը ձգել, վրան տախտակ դնել, իսկ վերջինիս վրա որևէ ծանրություն դնել: Թողնել 5 ժամ, հետո կտորը փոխել և էլի 12 ժամ թողնել այդպես: Լավ սեղմվելուց հետո մսի կտորները ամուր կապել թելով և կախել ոչ արևոտ տեղում 12 ժամ, որպեսզի չորանա (միսը շոշափելիս պետք է չոր լինի): Չամանի սերմերը լավ լվանալ և ծեծել: Սխտորը մաքրել և ծեծել: Չամանը, սխտորը, աղացած կարմիր պղպեղը խառնել և ջուր ավելացնել այնքան, որ ստացվի թթվասերի խտության զանգված: Չորացած մսի կտորները պատել պատրաստված մածուկի բարակ շերտով, շարել իրար կողք և 4 օր թողնել: Դրանից հետո միսը նորից վերը նշված մածուկով պատել, դնել ամանի մեջ և պահել 3-4 օր: Այս գործընթացը կրկնել 3 անգամ: Պատրաստի միսը հանել և չորացնելու համար 10 օր կախել ոչ արևոտ տեղում:
