Թեթև գազավորված գինին... Շամպայնից
ՀԱՆՐԱՀԱՅՏ ՄՈԼՈՐՈՒԹՅՈՒՆՆԵՐՇամպայնը ալկոհոլային խմիչք է, որը մարդկանց հայտնի է դարձել ավելի քան 350 տարի: Այն նաև կոչվում է թեթև գազավորված գինի: Շամպայնը հայտնվել է Ֆրանսիայի հյուսիս-արևելքում գտնվող Շամպայն նահանգում, որը հնուց էր հայտնի իր գինեգործությամբ: Պղպջակներով գինու մասին առաջին փաստագրված հիշատակումը թվագրվում է 1668 թվականով: Հենց այդ ժամանակ էլ աբբա Գոդինոն իր եկեղեցական գրքում նկարագրել է «թեթև գունավորված, գրեթե սպիտակ` գազերով հագեցած գինին»: Դրանից 20-30 տարի անց գազավորված գինիները տարածվել են Ֆրանսիայում:
Շամպայնի աճող ժողովրդականութան հետ աճել է նաև արտադրողների թիվը, ինչպես նաև բարելավվել է որակը: Ֆրանսիացի գինեգործները շամպայնի արտադրության համար օգտագործել են գինու կրկնակի խմորման տեխնոլոգիան, որի ժամանակ գազը առաջանում է տարողություններում: Իսկ մինչ այդ գազի առաջացումը համարվել է երկրորդական և հաշվի չի առնվել: Ֆրանսիական աբբայություններում արտադրված գինիները մեծ ժողովրդականություն են վայելել:
Դրան նպաստել են Պերինյոնի տան և Ուդարի տաղանդավոր գինեգործները, որոնք կարևոր դեր են խաղացել շամպայնի արտադրության զարգացման մեջ: Այնուամենայնիվ, երկար տարիներ գինին գործնականում պատրաստվել է տնայնագործական պայմաններում, չեն եղել ճշգրիտ տվյալներ ֆերմենտացման գործընթացների վերաբերյալ, տեխնոլոգիայի պահպանման ժամանակ եղել են բազմաթիվ սխալներ, ոչ մի բան չի գրանցվել:
Նաև արտադրության ընթացքում առկա թերությունների մեծ տոկոսը հաճախ հանգեցրել է ճնշման պատճառով տարողությունների վնասման: Մինչև 18-րդ դարի կեսերը շամպայնը սպառողներին առաքվել է տակառներով, որոնց վրա եղել են շշալցման գրավոր ցուցումներ: Շամպայնի գյուտը ընդունված է վերագրել Պերինյոնի տանը, ավելի կոնկրետ՝ Պիեռ Պերինյոնին: Բենեդիկտյան այդ վանականը հրաշալի պատրաստված է եղել և ունեցել է գինեգործության ֆենոմենալ հոտառություն:
1670 թվականին նրան են վստահվել Օթվիլերյան աբբայության գինու նկուղները: Նրա գյուտերի զինանոցում է կարմիր խաղողի տեսակներից ստացվող սպիտակ փրփրուն գինին, ինչպես նաև այլ տեխնոլոգիաները և գինիների պահպանման տեխնիկան: Պերինյոնի տունը հայտնի է նաև խցանափայտի կեղևից խցան պատրաստելու գյուտով, որը թույլ է տվել հերմետիկորեն խցանել գինին շշի մեջ և թույլ չտալ գազերի արտահոսքը: Շամպայնի առաջացման պատմության մեջ ոչ պակաս կարևոր և հայտնի գինեգործ է վանական Ուդարը:
Նա Սեն Պիերի աբբայությունում զբաղվել է փրփրուն գինիների արտադրությամբ: Ուդարի արտադրանքը ավելի հանրաճանաչ է եղել, քան Շամպայն նահանգի գինիները, բայց աբբայական արտադրության ծավալները զգալիորեն ցածր են եղել, որն էլ վճռորոշ դեր է խաղացել անվան առաջացման գործում:
19-րդ դարը շամպայնի արտադրության մեջ է մտցրել լրացուցիչ նյութեր և տեխնոլոգիաներ: Խմորման և նստեցման համար սկսել են օգտագործվել խորքային նկուղներ, որտեղ առկա է հաստատուն խոնավությունն ու ջերմաստիճանը:
Նաև մեխանիզացվել է գինեգործության գործընթացը: Իսկ 19-րդ դարի կեսերից ի վեր շամպայնի արտադրությունը դրվել է հոսքագծի մեջ և հասցվել արդյունաբերական մասշտաբների:
