Գազարը արժեքավոր է նրանով, որ պարունակում է մեծ քանակությամբ կարոտին, որը փոխարկվում է մարդու  օրգանիզմին այնքան անհրաժեշտ A վիտամինի:

Պարունակում է նաև B խմբի վիտամիններ, նիկոտինային թթու: A վիտամինի օրվա պահանջ բավարարելու համար բավական է ուտել 30-50 գրամգազար: Բայց քանի որ այն մարսվում է  ճարպերի առկայության դեպքում, անհրաժեշտ է օգտագործել աղցանների ձևով, թթվասերի, բուսական յուղի հետ:

Գազարն անհրաժեշտ է երեխաներին, քանի որ A վիտամինը նպաստում է հասակի աճին: Այս բանջարեղենը շատ օգտակար է տեսողության  դեպքում:  Կոբալտի և երկաթի աղերի շնորհիվ բարձրացնում է հեմոգլոբինի քանակը արյան մեջ: Հարուստ է նաև կալիումի աղերով, ահա թե ինչու գազարով պատրաստված աղցաններն ու ճաշերը խորհուդ են տրվում սրտանոթային հիվանդությունների դեպքում:

Հիանալի միջոց է փորկապության  դեմ: Շատ օգտակար է կերակրող մայրերին և հղի կանանց: Գազարի բջջանյութը նպաստում է օրգանիզմից խոլեստերինի դուրս գալուն և կանխում է աթերոսկլերոզի առաջացումը:

Հակացուցում. Խոցի դեպքում գազարը կարող է գրգռել ստամոքսի ու աղիների լորձաթաղանթը: Նման հիվանդներին հում գազար խորհուրդ չի տրվում:
