Եփած երշիկեղենի ընտրությունը շուկայում թեև մեծ է, սակայն սպառողը հիմնականում չի կարողանում կողմնորոշվել, թե արտադրանքը, ինչ նյութեր է պարունակում, որքան է մսի բաղադրությունը, կալորիականությունը, թույլատրվող համահոտային խթանիչների քանակությունը և այլն:

Այս պայմաններում դժվար է հասկանալ նաև, թե, օրինակ, բժշկական, սիրողական կամ այլ տեսակներ իրարից ինչով են տարբերվում և առհասարակ ինչ չափանիշների համապատասխան են դրանք դասակարգվում:

Հիշեցնենք, որ վերջին լաբորատոր փորձաքննության արդյունքները ցույց են տվել որ «Մոյա Սեմյա» ընկերության սիրողական, սինգա բժշկական և բժշկական բարձր կարգի, «Բիելլա» ընկերության սինյուգա եփած, նախաճաշի, բժշկական ավանդական, «Բեկոն» ընկերության ընտանեկան բժշկական, գերմանական և «Արմ միթ» ընկերության բժշկական և սիրողական արտադրատեսակներում նիտրատի և նիտրիտի չափը գերազանցել է երշիկեղենի բոլոր տեսակներում: Եվ եթե նիտրատների թույլատրելի ամենաբարձր շեմը1 կգ-ի մեջ250 միլիգրամ է, ապա որոշ ապրանքատեսակների մեջ նիտրատների քանակությունը մոտ երեք անգամ ավելի բարձր է եղել:

Եթե սրան գումարենք նաև այն, որ ցանցային խոշոր սուպերմարկետներում եփած երշիկեղենի տարբեր տեսակները հիմնականում վաճառվում է նախապես կտրատված և շատ դեպքերում էլ պարզապես հասկանալի չէ, թե որ ֆիրմայի որ տեսակի երշիկն է փաթեթավորված և կշռածրարված, ապա հստակ կարող ենք ասել, որ ընտրությունը դառնում է անհնար:

Ստացվում է, որ մի դեպքում արտադրողները պատշաճ չեն իրազեկվում, թե եփած երշիկն ինչ նյութեր է պարունակում: Մյուս դեպքում էլ սուպերմարկետներում է պատկերն աղավաղվում: Եվ արդյուքնում սպառողը տուն է տանում իր համար անհասկանալի բաղադրություն և որակ ունեցող ինչ-որ սննդամթերք, որի պիտակի վրա լավագույն դեպքում ընկերության անունն ու տվյալ ապրանքի քաշն ու գինն է նշված, ինչը կրկին օրենքի խախտում է:
