Գազարը առավելապես... գազարագույն չէ

Մենք գիտենք, որ...

 

Սովորական գազարի գույնը հենց... գազարագույնն է (կամ, կարելի է ասել, նարնջագույնը): Անունն էլ է այդ մասին ասում:

Իրականում այնքան էլ այդպես չէ:

Պարզվում է, որ գազարագույն գազար մարդկությունը սկսել է օգտագործել միայն վերջերս:

Գազարը (լատիներեն՝ Daucus) նեխուրազգիների (հովանոցավորներ) ընտանիքի երկամյա, հազվադեպ՝ միամյա կամ բազմամյա, բույսերի ցեղ է։ Հայտնի է նրա մոտ 60, Հայաստանի Հանրապետությունում՝ 1 տեսակ ։ Արմատապտուղը մսալի է, գլանաձև, իլիկաձև՝ բութ կամ սուր ծայրով, ու ամենահետաքրքիրը՝ կարմիր, սպիտակ, դեղին, երբեմն՝ մուգ կապտավուն գույնով։

Այս արմատապտուղը ավելի քան 5000 տարվա պատմություն ունի: Մարդու կողմից գազար օգտագործելու առաջին տվյալները վերաբերում են մեր թվարկությունից առաջ 3000–ականներին: Հայտնի է, որ առաջինը գազար օգտագործել են Աֆղանստանում: Այն ժամանակ գազարը ներսից դեղին էր, դրսից՝ կարմրավուն: Հին հույները և հռոմեացիները ևս գազար օգտագործել են, բայց հիմնականում բուժական նպատակով, համարվում էր, որ գազարը ուժեղացնում է տղամարդու սեռական պոտենցիան:

Գազարը Եվրոպա է բերվել 10–ից 13–րդ դարերում: Անդալուսացի բժիշկ  Իբն–ալ– Ավամը նկարագրել է գազարը որպես կարմիր և դեղին արմատապտուղ: Բյուզանդացի բժիշկ Սիմեոն Սիտը ևս նկարագրում է այդ գույներով: 17–րդ դարում Հոլանդիան դարձել էր գազարի ամենամեծ արտահանողը Եվրոպայում: Այդ ժամանակ էլ հենց հոլանդացի սելեկցիոներների կողմից ստեղծվեց նարնջագույն (իմա՝ գազարագույն) գազար՝ ի պատիվ հոլանդական Օրանժ արքայական դինաստիայի: Ներկայիս մշակովի գազարի բոլոր տեսակները կապ ունեն Հոլանդիայում ստեղծված գազարի չորս տեսակների հետ՝ «վաղ կիսաերկար», «ուշ կիսաերկար», «սկարլետ» և «երկար օրանժ»:

Ներկայումս խանութներում արդեն կարելի է հանդիպել նաև այլ գույների գազարներ՝ սպիտակ, դեղին, մուգ կարմիր, թանաքագույն և այլն: 1997 թվականին Իսլանդիայում հաջողվել է աճեցնել գազար շոկոլադի համով, նպատակն այն է, որ երեխաները գազար հաճույքով ուտեն:

Մշակովի գազարը մտնում է տնտեսապես ձեռնտու մշակաբույսերի տասնյակի մեջ: Մեկ տարում աշխարհում մոտավորապես արտադրվում է մոտ 36 միլիոն տոննա գազար: Այդ ամենի միայն կեսը արտադրվում է Չինաստանում, մնացածը՝ այլ երկրներում՝ Ուզբեկստան, Ռուսաստան, ԱՄՆ և այլն: Գազարի արտադրության ավելացումը աշխարհում իրականանում է ոչ թե բերքատվության աճով, այլ մշակելի տարածքների ավելացման հաշվին: Գազարը առանց այդ էլ բերքատու կուլտուրա է, նրա բերքատվությունը մեկ հեկտարից կազմում է 20–ից 80 տոննա:

Եթե հաջողվում է ստանալ գազար շոկոլադի համով և տարբեր գույների, նշանակում է կարելի է զարգացնել այդ ճյուղը: Օրինակի համար, եթե սելեկցիոներները ստանան ծիրանագույն գազար՝ ծիրանի համով, նշանակում է էլ պետք չի լինի ծիրանենի աճեցնել: Անհրաժեշտություն չի ծագի, որ պետությունը ֆերմերներին վճարի ձմռանը ծառերի ցրտահարության, գարնանը կիսահասած բերքի կարկտահարության և այլ բնական աղետների համար: Իսկ խանութում կարելի է մրգերի փոխարեն միայն գազար գնել՝ համապատասխան մրգի համով և գույնով:
