Традиции армянского пивоварения

По свидетельству Ксенофонта, первыми крепкое пиво начали варить жители Ванского царства. И только много веков спустя традицию приготовления крепкого пива возродили северные народы Европы.

Пивоварение тесно связано с культурой земледелия и существует с тех самых пор, как люди научились перерабатывать зерна злаков в хлеб. История пива начинается с незапамятных времен и уходит корнями в ранние цивилизации. Она начиналась примерно в 9500 году до н.э. Тогда это был просто напиток из дикой пшеницы, ячменя и овса, процесс приготовления которого очень сильно напоминал пивоварение. Один из археологов доказал, что в шумерской цивилизации основным напитком было именно пиво. В Древнем Египте тоже в совершенстве владели процессом пивоварения уже в 2800 году до н.э.

В древнем мире пиво было популярно: его пили все — и простой народ, и знать. Однако в Греции и Римской империи жители все же отдавали предпочтение вину, нежели «хлебному напитку».

На территории современных Армении, Ирана, Сирии и Египта археологами были обнаружены глиняные сосуды большой емкости с узким горлом, в которых хранились зерна. Сверху они были накрыты керамической плитой с отверстием посередине, через которое вставляли трубку и пили из нее пиво. По мнению ученых, в эти сосуды попадала дождевая вода, в теплом климате зерно прорастало и начинался процесс брожения.

Шумеры, хетты и хурриты, египтяне, вавилоняне и саки в приготовлении пива применяли ячмень, просо, дробленый рис и овес, затем из коры деревьев, меда, листьев и пряностей готовили аромат.

В Урарту пиво начали варить в IХ–VIII веках до н.э. Найденные в Эребуни глиняные сосуды для хранения напитка сохранили следы пива из ячменя и проса. Впоследствии армяне изготавливали пиво в основном из ячменя, соответственно называя его гареджур, то есть «ячменная вода».

Первые сведения об армянском пиве относятся к V веку до н.э. и оставлены древнегреческим историком Ксенофонтом. Побывав в одной из деревень Царства Урарту, он писал:

«Там также хранились пшеница, овощи и ячменное пиво в кратерах. В уровень с краями сосудов в вине плавал ячмень, в него был воткнут тростник больших и малых размеров, но без коленцев; кто хотел пить, должен был взять тростник в рот и тянуть через него вино. Не смешанное с водой вино было очень крепким, но для людей привычных это был очень приятный напиток».

На протяжении долгого времени наши предки добавляли в пиво различные травы для получения аромата. Стоит отметить, что в те времена пиво было намного крепче, чем самый крепкий сорт современного пива.
